Nesos Passito from Pantelleria - sweet wine

Use:
Excellent for meditation. Excellent with desserts and pastries.
Description:
The pride of the island’s wine production, Passito di Pantelleria has ancient origins. The grapes come from the Zibibbo vineyards, carefully selected and categorized as DOC (Denomination of Controlled Origin). Once the mature grape has been harvested, it is left to dry in the sun on special drying racks for about 15-20 days, in order to obtain a heartly sugar content ranging between 32% to 65%. The raisins are then added to wine juice after about 20 days before the start of fermentations, yet at the end of primery fermentations. After 30 or 40 days, the product is put to rest in oak barrels for about a month and aged in a bottle for a least 4 or 5 months.
Characteristics
:
Bright golden amber color, distinctive smooth taste, naturally sweet and caressing to the palate, fine and intense aroma with flavors of raisins and apricots.
