Use:
The caper is extremely versatile. They can be used in
salads, or in a tomato based sauce to dry pasta and as a garnish
with fish and meat. In rare exceptions, caper can be used as is
without the removal of salt.
Description:
Medium sized capers
harvested and preserved in sea salt. Harvested by hand, every 8 / 10
days from May to September, the farmer returns to the same plant to
pick the buds have not yet bloomed. Capers from Pantelleria have an
intense aroma and taste and unlike other capers are acrid like other
herbaceous crops. Capers vary in colour from dark green, to mustard
to violet.
